Typica is one of the four main branches of the coffee family tree. At the end of the 16th century, the Dutch stole a coffee plant from the Turks in the port of Mocha in Yemen. They took it first to the Dutch colonies of Java and East Timor, and then to the Caribbean. The main characteristics of Typica are its large beans and low yield. The Typica plant can grow up to 5 meters tall and its leaves are elliptical and elongated.
This batch is a Red Honey process. This means that the coffee beans were set to dry with the mucilage of the cherry still around the green beans; as opposed to having it fully washed before drying. The colour of the mucilage (white, yellow, red or black) is dependant on humidity, shade and drying time - the darker the mucilage, the more laborious the process for the farmer.
